Mini Pumpkin Pie Tarts

This is one of my absolute favorite fall recipes! If you have someone that can’t have cashews, substitute raw sunflower seeds (same amount) and soak them like it calls for the cashews. The almond flour can be exchanged for Bob’s Red Mill’s (use 1.5 cups versus the almond flour) all purpose gluten free flour (red label) if someone can’t have almonds. Enjoy! ~ Diana

This is the recipe all have been asking (and begging!) me (Diana) for! Instead of corn starch, I used tapioca flour and I serve it over a bed of noodles that are full protein sources (lentil, quinoa, chick pea) or it can be served over quinoa.
